Corn Griddles and fresh apple sauce is a popular supper in the Mossy Nedder. The Bear eat little meat, but humans may like to accompany their griddles with bacon or sausage.

| Griddles are round flat tender
cakes browned on a griddle over direct heat. Sometimes they are called
pancakes. They are usually served with maple syrup or honey. The corn used
in this recipe may be fresh (cooked), frozen (cooked) or canned. The
ingredients and measurements in this recipe have been revised for human
use.
2 cups unbleached flour 2 eggs (beaten) 3 teaspoons baking powder 2 cups milk 1 teaspoon salt 1/3 cup vegetable oil 1/4 cup sugar 1 cup corn (drained) Preheat griddle.* (A large frying pan can be used if you do not have a griddle) To test griddle....sprinkle with a few drops of water; when the water sizzles, the griddle is ready. While the griddle is heating ......... Mix flour, baking powder, sugar and salt in a large bowl. Make a well in the center. Add the beaten eggs, milk and oil to the well. Gradually stir until mixed and then beat to a smooth batter. At this point you may want to lightly grease your griddle, if it is non-stick follow the manufacturer’s directions for use. Drop by tablespoonfuls onto hot griddle. Bake until the underside is golden brown and bubbles appear over the surface; turn. Bake other side. Repeat procedure until all the batter is used * If you are using a non-fat cooking spray, spray before heating |
