This Honey Raisin Cake recipe came from Mea. The measurements and ingredients have been revised for humans. Honey Raisin cake is a favorite of Corben’s and Mea always bakes plenty when he is expected to visit their tree trunk home.

1 cup clover honey 1/2 teaspoon allspice 1 cup brown sugar (packed) 1 teaspoon salt 1/3 cup vegetable oil 1 1/2 cup raisins 1 teaspoon cinnamon 3 cups unbleached flour 1 teaspoon cloves 2 teaspoons baking soda 1/2 teaspoon nutmeg 3/4 cup walnuts (optional) Preheat the oven to 350 degrees. Combine the honey, sugar, 2 cups hot water, oil, spices, salt and raisins in large saucepan. Bring to a boil; cook for 5 minutes. Remove from heat; allow to cool thoroughly. Add the flour, soda and walnuts; mix well. Pour the mixture into a greased 9 x 13 inch pan. Bake at 350 degrees for 30 - 45 minutes. The cake is done when the top springs back to a light touch and a tooth pick inserted near the middle is clean when removed. The cake should cool about 10 to 15 minutes before removing from the pan or it can be left in the pan. This cake is delicious frosted with a creamy vanilla frosting. (powdered sugar, margarine or butter, vanilla and a little milk.) |
